The white truffle from Istria

the white truffle (Tuber magnatum Pico). Sometimes it is also called the truffle from Istria, Istrian truffle, our Istrian truffle or the truffle.

I is called the king among truffles because it belongs to the group of truffles with the best characteristics (particularly with regard to its smell and aroma). Its rind/peridium is distinctly yellowish-white, yellowish-green or ochre (light brown). The colour variations depend on the type of habitat and symbiont tree. It is intensive, strong and completely unique, but with a pleasant aroma and taste.

It thrives in limestone, clay, clay and sandy and marly soils which are moist (but not excessively so or for a long period of time) and on a terrain from the Tertiary Period, but also on alluvial terrains with an alkaline or neutral reaction ((pH) 6.8-8). It grows at the altitudes of 3-600 metres above sea level, and sometimes even higher, provided the terrain is south-facing and moist. It binds to the roots of the aspen, poplar (black and white), willow, hazel, oak, European hornbeam and linden.

It ripens in August at the earliest, while the its full season generally lasts from October until the end of December. In case of a mild winter, it can even last until January.
