The black truffle from Istria
This species is also called Vittadini or the summer truffle. It has a round irregular shape, with pronounced lumps on the surface (3-10 millimetres wide, 1.5-3 millimetres high). Its dark brown or black rind (peridium) resembles a rough bark. It can grow to the size of a small orange. Its flesh is yellowish-brown with a network of tiny light brown veins. As a rule, its diameter reaches eight to ten centimetres. Its smell is weak and pleasant, but does not conceal the typical smell of fungi. This truffle has a tenderer aroma, which is reflected in its lower price. It thrives on sunnier parts of more compact terrains with a lot of clay content. It binds to the roots of several types of trees: the oak, beech, poplar, hazel, pine and linden. It grows on the surface, making its presence detectable by cracks in the soil. Sometimes it can even be found beneath small heaps of fallen leaves. It is gathered from May until November (lat. aestivum= of summer), while in favourable weather conditions it can be found in December as well.
